Olive & Tomato fettuccine is a budget-friendly, healthy meal that packs a lot of flavors. The lemon zest mixed with tomatoes and olives will make your taste buds sing. All you need for this simple recipe is a pot of boiling water and a few simple ingredients.
INGREDIENTS:
1 lemon
3 tomatoes, diced
3 cloves of crushed garlic
4 tablespoons extra virgin olive oil
1 tablespoon fresh chopped basil
1 tablespoon fresh chopped oregano
1/2 cup pitted kalamata olives sliced
1 box of Barilla fettuccine
optional...grated parmesan cheese & crushed black pepper
You can tweak the ingredients to your liking.
{If fresh herbs aren't available you can use dry.}
COOK THE FETTUCCINE ACCORDING TO THE PACKAGE DIRECTIONS.
WHILE THE FETTUCCINE IS COOKING PREPARE THE INGREDIENTS:
USING A VEGETABLE PEELER REMOVE THIN STRIPS OF PEEL FROM THE LEMON AND
CUT THE STRIPS INTO VERY THIN SLICES. POUR THE OLIVE OIL INTO A
LARGE SERVING BOWL. PLACE THE LEMON PEEL, DICED TOMATOES, OLIVES,
GARLIC, BASIL, AND OREGANO IN THE SAME SERVING BOWL. ADD THE
COOKED FETTUCCINE TO THE MIXTURE AND TOSS TO COMBINE.
SERVE WITH CRUSHED BLACK PEPPER AND GRATED PARMESAN CHEESE!
